Seabrook Crisps - Tuna crunch sandwich

Seabrook Crisps are celebrating National Crisp Sandwich week, and they are looking for the best crisp sarnie recipe! When I saw this announced by the Tots100 team, I didn't have to think twice ;)

Tuna and sweetcorn is probably our favourite sandwich filling. I think it was actually the Hubby who first introduced me to the crisp sandwich idea - we would buy sandwiches in town, get packet of crisps to go with them, and then open the sandwiches up, stuff them with crisps and eat like that. Now tuna sandwich without some crisps is not the same ;)

Here's my homemade tuna crunch sandwich:

  • 1 can of tuna in brine
  • 4 tbsp mayonnaise
  • 1/4 cup sweetcorn
  • 1/4 red pepper
  • 1/4 red onion
  • freshly ground pepper
  • mixed crunchy salad
  • wholemeal bread
  • pack of Seabrook straight cut sea salted crisps


Finely dice the onion and pepper, and put aside with drained sweetcorn. Open and drain the tuna, and put in in a bowl. Chuck in the sweetcorn, pepper and onion, add the mayonnaise and mix well. Season with freshly ground pepper.

Butter bread slice, cover it with fresh crunchy salad leaves and spread the tuna mix on top. Top up with a handful of Seabrook straight cut sea salted crisps and cover with another slice of bread. Then tuck in and enjoy the crunch! ;)
