Sweet cheese pancakes*

Pancakes filled with sweet quark cheese are my childhood taste. As weird as it may sound, most Poles would've eaten this for lunch, probably on a Friday when we'd go meat-free.






They're usually made with quark cheese - in Polish it's twaróg or ser biały (lit. "white cheese") -mixed with a little bit of sour cream for smoothness and sweetened. Usually some raisins are thrown in as well.


As I mentioned, I remember these being a dish served for lunch, but since they're quite filling, I decided to give them a little twist using dates, and serve them as suhoor meal.


To sweeten my cheese filling I used BELOVED Date Nectar - datelicious alternative to honey. 





Ingredients:

1. Pancakes (makes about 10)
  • 2 cups plain flour
  • 1 cup water
  • 1 cup milk
  • 1 egg
  • 1 tbsp oil
  • pinch of salt
2. Filling:
  • 250g Polish twaróg/ser biały*
  • 3-4 tbsp natural yoghurt
  • 5 tbsp BELOVED Date Nectar
  • 10 dates, chopped
*If you can't get the Polish cheese, then quark should be the closest in texture - alternatively you can just use plain soft cheese, then you don't need to add yoghurt.

Preparation:

Sift the flour with a pinch of salt into a bowl. Add the liquid ingredients and whisk until smooth. Allow to stand for about 30 minutes. Heat up a frying pan and add a ladle full of batter, spread evenly on the pan for a thin pancake and fry for couple of minutes on each side until lightly golden.

For the filling place your cheese into a bowl, add yoghurt and mix into a smooth paste. Add the Date Nectar and chopped dates, and mix well.

Spread the filling over half of the pancake, then fold the other half over it, then fold again into quarters. Drizzle some extra Date Nectar on top to serve. They're delicious both hot and cold!
